Chunky Guacamole Recipe

  • 3 large, ripe avocados peeled, seeded, and diced
  • 1/2 medium red onion peeled and diced
  • 1/2 cup diced cherry tomatoes or Roma tomatoes
  • 1 juice of 1 lime about 2 tablespoons
  • 2/3 cup cilantro diced
  • 1/2 tsp salt


  1. Slice the avocados open vertically, remove the seed, and then score the inside vertically and horizontally to create small squares of avocado.

  2. Invert the peeling so that the squares pop out or use a spoon to scoop the squares out and place them in a medium-sized bowl.

  3. Peel and dice the red onion and add it to the avocado.

  4. Roughly dice the tomatoes and add them to the other ingredients.

  5. Dice the cilantro and add it to the other ingredients, along with the lime juice and salt.

  6. Toss well but gently (you don't want to turn the avocado to mush), serve, and enjoy!

This Chunky Guacamole will stay fresh in the fridge, in an airtight container, for up to 3 days.
