Calico Skillet Potatoes

A hearty and delicious Southern Favorite, inspired by the Calico Skillet Potatoes at Silver Dollar City, a popular amusement park.

  • 4 small sweet potatoes peeled and sliced into 1/4 inch thick medallions
  • 3 medium russet potatoes peeled and sliced into 1/4 inch thick medallions
  • 1 large white or yellow onion diced (or 2 small onions)
  • 2 links skinless beef sausage or Chicken Apple Sausage
  • 1 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Old Bay Spice Seasoning
  • 1/2 tsp Slap Ya Mama seasoning
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt


  1. Add the oil to a large, deep skillet and heat on medium high until hot but not smoking.

  2. Slice the sausage on the diagonal and add to the hot oil. 

  3. Cook the sausage until blackened and "crusty", flipping as needed.

  4. Without draining the grease from the sausage, add the dice onion and cook until tender and translucent. 

  5. Add the sweet and russet potatoes and toss to coat in the oil.

  6. Season the potatoes (you can always add more seasonings later if needed) and toss to combine.

  7. Place a lid on the skillet and continue cooking, reducing the heat to medium.

  8. Cook until the potatoes are fork tender, removing the lid occasionally to toss the potatoes as needed to prevent burning. 

  9. Once cooked, serve hot and enjoy!
