  • 1 box Spice Cake Mix any brand
  • 3 eggs
  • 1/2 cup Canola or Olive Oil
  • 15 oz Pureed Pumpkin
  • 1/2 cup Walnuts or Pecans chopped
  • Butter salted or unsalted


  1. Preheat oven at 300F.

  2. Place the cake mix, eggs, oil, and pumpkin in a large mixing bowl and stir well, beating the eggs in as you go.

  3. Stir until no lumps remain and the batter is smooth.

  4. In a separate, small bowl, use a biscuit cutter or meat muddler to chop the nuts into small bits.

    You can also use a food processor.

  5. Stir the nuts into the batter.

  6. Spray a standard loaf size pan with nonstick cooking spray and spread the batter evenly into the pan.

  7. Bake at 300F for 40-45 minutes or until a toothpick inserted in the middle comes out clean.

  8. Use a stick of butter to rub over the top of the bread, creating a butter glaze.

  9. Allow to cool completely before slicing.
