Slow Cooker Chicken Stew

  • 2 boneless skinless chicken breasts
  • 4 russet potatoes peeled and cut into chunks
  • 1 regular sized bag baby carrots
  • 1 10.5 oz can fat free cream of mushroom soup
  • 1 10.5 oz can fat free cream of chicken soup
  • 2 cups water
  • 1/2 tsp ground black pepper
  • 1/2 tsp dried basil
  • 1/4 tsp salt
  • 1 tsp dried or fresh parsley
  • 1 tsp garlic powder
  • 1 tsp onion powder


  1. Place the chicken breasts into a 5 quart or larger slow cooker and add the carrots and potatoes on top.

  2. Add all of the seasonings into the slow cooker.

  3. In a large mixing bowl, combine both soups and stir well.

  4. Pour the soups over the ingredients in the slow cooker, and pour in 2 cups of water.

  5. Place the lid on the slow cooker and cook on high for 5 hours or low for 7 hours.

  6. Once the cooking process is over, remove the chicken and shred between two forks. 

  7. Stir the shredded chicken back into the slow cooker with the potatoes and carrots and stir well. Serve hot and enjoy!
