Ingredients

  • 5 boneless skinless chicken tenders uncooked and diced
  • 12 oz store bought Vodka Sauce
  • 4 cups fresh or frozen spinach
  • 12 oz store bought cauliflower risotto
  • 1 tbsp extra virgin olive oil or any cooking oil or butter/ghee
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried basil flakes or Italian seasoning
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt

Optional Substitutes for the Chicken:

  • 2 boneless skinless chicken breasts diced
  • 3 skinless chicken thighs diced
  • 2 cups shrimp peeled, cleaned, tails off
  • 1 lb ground hamburger cooked
  • 1 lb ground Italian sausage cooked

Optional Substitutes for the Vodka Sauce:

  • 12 oz Marinara Sauce
  • 12 oz Creamy Four Cheese Sauce
  • 12 oz Alfredo Sauce
  • 12 oz Italian Meat Sauce
  • 12 oz Italian Sausage and Garlic Sauce
  • 12 oz Italian Mushroom Sauce
  • 12 oz Four Cheese Tomato Cream Sauce
  • 12 oz Roasted Red Pepper Alfredo Sauce
  • 12 oz any type of your favorite Italian pasta sauce

Optional Substitutes for the Spinach:

  • 1 cup sliced sauteed mushrooms
  • 1 cup sauteed onions
  • 1 1/2 cups sauteed sliced zucchini
  • 1 1/2 cups sauteed sliced squash
  • 1 cup diced tomato
  • 1 cup chopped sauteed asparagus
  • 1 cup sliced sauteed bell pepper

Optional Substitutes for the Cauliflower Risotto:

  • 12 oz cauliflower rice
  • 12 oz regular risotto
  • 12 oz cooked rice
  • 12 oz zoodles
  • 12 oz any type of cooked pasta
  • 12 oz cooked spaghetti squash
  • 12 oz cooked quinoa
  • 12 oz cooked couscous

Optional Side Items:

  • Texas Garlic Cheese Toast
  • Garlic Sticks
  • Mozzarella sticks
  • Green Beans
  • Roasted Broccoli
  • any type of side salad
  • grilled or sauteed asparagus

Instructions

  1. Place the olive oil (or butter) in a large, deep skillet and melt on medium high heat.

  2. Cut the chicken tenders into bite sized pieces, and add to the hot skillet.

  3. Season the chicken with garlic powder, onion powder, basil, pepper, and salt and stir to combine.

  4. Cook the chicken for 10-15 minutes or until cooked through, then add the spinach.

  5. Cook spinach until it wilts, then add in the Vodka Sauce.

  6. Cook the cauliflower risotto according to package directions.

  7. Serve the chicken and sauce mix over the cauliflower risotto and add any desired side items. Enjoy!
