Ingredients

  • 1 cup jasmine rice uncooked
  • 1 cup organic mixed wild rice uncooked
  • 2 cups rotisserie chicken diced
  • 1 oz processed American cheese or two slices diced
  • 2 tbsp unsalted butter or ghee
  • 1 cup water
  • 2 cups chicken broth
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp ground sea salt

Instructions

  1. Place the rice, water, and chicken broth in an Instant Pot pressure cooker and lock the lid into place.

  2. Set the steam release valve to the sealing position and select the "rice" feature.

  3. Once the rice is cooked, quick release the pressure by moving the steam release valve to the venting position using a long handled spatula or spoon.

  4. Remove the lid from the Instant Pot and add in the diced chicken, diced cheese, butter, and seasonings.

  5. Stir until well combined and until the cheese and butter is melted.

  6. Serve hot with your choice of side items. Enjoy!
