Slow Cooker Breakfast Casserole

An easy breakfast casserole that's full of nutritious ingredients to keep you full all morning long!

Ingredients

  • 14 eggs
  • 1 lb lean ground turkey sausage in the roll
  • 2 cups shredded sweet potato about 1 medium sized sweet potato
  • 1 1/2 cups fresh, raw baby spinach
  • 1 medium yellow onion diced
  • 1 tsp extra virgin olive oil
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt

Optional Garnishes:

  • sliced cherry tomatoes
  • diced avocado
  • hot sauce
  • salsa

Instructions

  1. Place the olive oil in a skillet and heat on medium heat until hot but not smoking.

  2. Peel and dice the onion and add to the hot oil, sauteing until translucent. 

  3. Once the onion is cooked, add in 1lb of turkey sausage and cook until browned and cooked through. Use a spatula or meat masher to break into small pieces as it cooks. 

  4. Drain any grease the turkey cooked out and set aside. 

  5. Peel a medium sweet potato and shred using a cheese grater. 

  6. Spray the inside of a 9x13 casserole slow cooker or a 6 quart oval slow cooker with nonstick cooking spray. 

  7. Spread the shredded sweet potato on the bottom of the slow cooker, then add the spinach leaves. 

  8. Top the spinach with the cooked ground turkey and onions.

  9. Crack 14 eggs into a large mixing bowl and season with the salt and pepper. Whisk until fully beaten and combined with a whisker.

  10. Place the lid on the slow cooker and cook on high for 3 hours or low 6 hours.

  11. Once cooked, turn the heat off and top with sliced cherry tomatoes or diced avocado for garnish. Can also be served with salsa or hot sauce for a little extra spice.

Re-Heating Instructions:

  1. This casserole is great for meal-prep because you can portion it out and easily re-heat it in the microwave the next day for a fast breakfast or lunch. 

  2. Will keep in the fridge in an airtight container for up to 4 days.
