A hearty and delicious Southern Favorite, inspired by the Calico Skillet Potatoes at Silver Dollar City, a popular amusement park.
Add the oil to a large, deep skillet and heat on medium high until hot but not smoking.
Slice the sausage on the diagonal and add to the hot oil.
Cook the sausage until blackened and "crusty", flipping as needed.
Without draining the grease from the sausage, add the dice onion and cook until tender and translucent.
Add the sweet and russet potatoes and toss to coat in the oil.
Season the potatoes (you can always add more seasonings later if needed) and toss to combine.
Place a lid on the skillet and continue cooking, reducing the heat to medium.
Cook until the potatoes are fork tender, removing the lid occasionally to toss the potatoes as needed to prevent burning.
Once cooked, serve hot and enjoy!
