Keto Burrito Bowl

This Low Carb Burrito Bowl will have you doing the happy dance if you're also wanting a Paleo Burrito Bowl or Low Calorie Burrito Bowl. Oh, and did I mention it's fast, easy, and delicious? We covered all of our bases with this one!

Ingredients

  • 1 lb Lean Grass-Fed Ground Beef or any 93% lean ground beef or ground turkey
  • 12 oz bag Frozen Cauliflower Rice plain
  • 1 cup Blender Salsa or any salsa with no sugar
  • 1/2 tbsp extra virgin olive oil
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1 tbsp dried minced onion
  • 1 tbsp fresh minced garlic

Optional Garnishes:

  • sliced avocado
  • jalapeno slices
  • diced bell pepper
  • shredded lettuce
  • hot sauce or salsa
  • sour cream or plain, nonfat Greek yogurt
  • shredded cheese
  • sliced black olives
  • sliced banana peppers
  • diced purple or yellow onion
  • shredded red cabbage
  • pico-de-gallo
  • guacamole
  • refried beans or black beans
  • cherry tomatoes

Instructions

  1. Place the oil in a large, deep skillet and heat on medium heat until hot. 

  2. Add the minced onion and minced garlic and saute until fragrant and translucent. 

  3. Add the ground beef along with the salt, ground black pepper, cumin, chili powder, and paprika.

  4. Cook the meat with the spices, using a meat masher or spatula to break the meat into small crumbles as it cooks. Cook the meat until completely browned and no pink remains. (about 10 minutes)

  5. Once cooked, drain any remaining grease and add in the frozen cauliflower rice. This can be added in frozen or thawed.

  6. Stir the rice in with the meat, cooking on medium heat until the rice is completely thawed and warmed through. (about 5-10 minutes)

  7. Stir in the salsa and remove from heat.

  8. Serve in a bowl topped with any desired garnishes you prefer. Enjoy!
