Sweet Corn Casserole

Sweet Corn Casserole is a Southern Corn Spoonbread, filled with sweet corn, and melted cheese. This Corn Pudding uses Jiffy Cornbread to create a delicious, sweet and savory dish.

  • 1 box Jiffy Corn Muffin mix
  • 14.75 oz sweet creamed corn
  • 14.75 oz whole kernel corn drained
  • 1 cup sour cream
  • 1 egg beaten
  • 1 stick butter melted
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1 cup mild cheddar cheese shredded


  1. Combine the corn muffin mix, creamed corn, whole kernel corn, egg, sour cream, butter, and seasonings in a medium sized mixing bowl and stir well.

  2. Spray an 8x8 or 9x10 casserole dish with nonstick cooking spray and pour the corn casserole mixture in. 

  3. Bake at 350F for 35 minutes or until a toothpick inserted in the middle comes out clean.

  4. Once cooked through, top with the shredded cheddar cheese and bake at 350F until cheese is melted. 

  5. Serve hot and enjoy!
