Cheesy Dorito Bake

  • 1 lb lean ground beef
  • 1 cup fat free shredded cheddar cheese
  • 1/2 cup fat free sour cream
  • 1 tbsp Cajun seasoning
  • 1 box Rice-a-Roni Four Cheese Rice
  • 5 slices American cheese
  • 1/2 cup Nacho Cheese Doritos, crushed


  1. Cook ground beef, drain grease and set aside.

  2. Cook rice according to package directions.

  3. In a large bowl mix together the beef, rice, shredded cheese, sour cream, and cajun seasoning until well blended.

  4. Spray an 8x8 casserole dish with nonstick cooking spray and pour crushed doritos in the bottom. 

  5. Layer the beef mixture on top of the Doritos, then lay the sliced cheese on top in rows so as to cover the entire top of the casserole. You may have to cut some in two to do this. 

  6. Bake at 350F for 15 minutes or until cheese  on top is melted and the casserole is heated through.  

Recipe Notes

This recipe comes to 9 Smart Points per 1/2 cup serving. Recipe yields 8, 1/2 cups. 

Lean ground turkey or venison can be substituted for lean ground beef. Be sure to change calories and calculate points accordingly if using substitutions. 

Cajun seasoning is a little spicy so if you have young children who are sensitive to spice, mild taco seasoning can be substituted for the Cajun seasoning.
