Leprechaun Snack Mix

A sweet & salty, crunchy snack mix perfect for St. Patrick's Day school and office parties.

  • 2 cups rice square cereal
  • 2 cups corn square cereal
  • 2 cups Lucky Charms cereal
  • 2 cups small pretzel twists
  • 1 cup salted peanuts
  • 1 cup green M&M's any kind can be used - I used Peanut M&M's
  • 1/2 block White Chocolate Almond Bark
  • 1/2 tsp olive or canola oil


  1. Place all cereals, pretzels, peanuts, and M&M's in a large mixing bowl and toss gently with your hands until well combined. 

  2. Cover a large baking sheet with waxed paper in preparation for the next steps. 

  3. Melt the almond bark along with the oil on low heat in a medium sized sauce pan, stirring continually. 

  4. Once every square of the chocolate has melted, remove the pan from the stove immediately and pour over the snack mix in the bowl.

  5. Very gently and quickly fold the snack mix and the almond bark together with a silicone spoon or spatula until chocolate is evenly disbursed in the snack mix.

  6. Immediately pour the snack mix onto a waxed paper and spread out in a thin, even layer.

  7. Allow the chocolate to set and dry completely (about 10 minutes) and then break the large chunks into small, bite sized chunks and store in an airtight container or freeze. 

Recipe Notes

This snack mix will keep in an airtight container for up to three months in the fridge or for six months in the freezer.
