Skinny Chicken Enchiladas

A fast and easy healthy, chicken enchilada recipe the entire family will enjoy.

  • 2 cups shredded chicken
  • 1 cup Plain Nonfat Greek Yogurt
  • 1 1/4 cups shredded cheese use fat free cheddar for a skinner option
  • 12 oz Mild Taco Bell Sauce
  • 10 oz mild red enchilada sauce
  • 12 corn tortillas


  1. Place shredded chicken in a medium sized mixing bowl along with the taco Bell sauce and Greek yogurt. Stir well,

  2. Lay a tortilla flat and spoon 2 tablespoons of the chicken mixture on the tortilla shell and 1tbsp of cheese.

  3. Roll the enchilada from left to right (not too tight) and place in a 9x8 casserole dish that has been sprayed with nonstick cooking spray.

  4. Place all enchiladas in a row in the dish and top with the remaining shredded cheese. 

  5. Pour the enchilada sauce over the enchiladas and bake at 350F for 15-20 minutes or until the cheese is melted and the enchiladas are heated through.

  6. Serve hot and enjoy! 

Recipe Notes

Use 1/2 cup fat free shredded cheddar cheese and 1/2 cup of red enchilada sauce to make these Skinny Chicken Enchiladas Weight Watcher Friendly. With the modifications, this recipe comes to 2 Freestyle Smart Points for one enchilada.
