Mashed Cauliflower

Creamy, cheesy, mashed cauliflower that will give mashed potatoes a run for their money!

  • 1 large head of cauliflower with stem and leaves removed
  • 1/2 cup shredded American cheese
  • ground black pepper to taste
  • onion powder to taste
  • garlic salt to taste
  • 2 tbsps Plain Nonfat Greek Yogurt
  • 2 tbsps Mayonnaise


  1. Wash the cauliflower and remove the stems and leaves. 

  2. Place the halved cauliflower into a 2 quart or larger slow cooker and add just enough water to cover the cauliflower.

  3. Place the lid on the slow cooker and cook the cauliflower on high 2 hours or low 4 hours. 

  4. Once cooked, drain all of the water from the cauliflower and use a potato mashed to mash it until smooth.

  5. Add in the seasonings, cheese, Greek yogurt, and mayonnaise and stir well.

  6. Serve hot and enjoy!

Fat Free Cheddar Cheese can be used and the amount of cheese reduced to make this recipe Weight Watcher Freestyle Smart Point friendly.
