Slow Cooker Tomato Basil Bisque

A delicious, savory bisque that tastes similar to BJ's Brewery Tomato Basil Bisque.

Ingredients

  • 2 28oz cans tomato sauce
  • 2 28oz cans crushed tomatoes blended until smooth
  • 4 cups low fat low sodium chicken or bone broth
  • 1 cup fat free milk
  • 2 tsp dried basil flakes
  • 1 1/2 tbsp garlic salt
  • 1 tbsp dried minced onion
  • 1 tbsp garlic powder
  • 1/2 tsp salt
  • 2 1/2 tbsp butter

Instructions

  1. Pour tomato sauce into a 4 quart or larger slow cooker, blend crushed tomatoes for 10 seconds per can and pour into the slow cooker. 

  2. Add in all seasonings and stir until well combined.

  3. Add in the broth and stir again.

  4. Cover and cook on high for 3 hours or low 5 hours. 

  5. Once cooked, remove slow cooker insert from the heating element and allow to sit and cool, with the lid off, for about 15 minutes.

  6. Once cooled, add in the milk and stir well.

  7. Serve hot with grilled cheese sandwiches and fresh Caesar salad on the side and enjoy! 

FREEZER INSTRUCTIONS:

  1. Place cooked and cooled soup into an airtight container with a lid. Use painters tape and a black permanent marker to write the name of the dish along with the day you made it and place the tape on the bowl and freeze.

  2. When you are ready to heat the soup, set out the night before to thaw, or place in the microwave for 3-4 minutes to thaw slightly before pouring into a sauce pan and heating on medium heat while stirring until warmed through. 

  3. Serve hot with grilled cheese sandwiches and Caesar Salad.
