Hey friends! I don’t know about you but there is just something about a good, Southern Style Chunky Chicken Salad that really sets me in happy mood. Chicken Salad just screams spring and summer to me for some reason – maybe because that’s the only time I ever really make it. Do you have any favorite seasonal dishes that bring back wonderful memories for you or just signify something special to you? This Southern Style Chunky Chicken Salad is definitely one of those recipes for me. When I make this Chicken Salad I taste all of the fresh, crisp, flavors of summer. Something about it just calls me to relax a little, grab a glass of ice cold peach tea, and sit on the front porch, rockin’ away in a creaky old porch swing while listening to the cicadas in the trees. There’s also something to be said of a Southern Style Chicken Salad that is so versatile. I paired this with lettuce and Lavash bread but it’s equally as delicious on whole, honey wheat bread, croissants, stuffed into avocado boats, or in a butter lettuce wrap. The possibilities are endless! You could even dip some buttery crackers or celery sticks into this Chicken Salad and enjoy it like that for a snack!
I think one reason why this recipe is so special to me is because my Granny has always loved chicken salad of all kinds, but especially a good, chunky chicken salad. When I was a teenager living at home in Oklahoma, Granny lived just down the dirt road from where we lived so I spent every evening at her house and always stayed with her over the weekends. I was always interested in cooking and one of the first things I learned to make was this easy, Southern Style Chunky Chicken Salad. Granny and I both shared a love for food and Old Time Radio shows so often times on Sunday afternoons Granny would make Chicken Salad and I would throw together some Tomato Soup (our favorite soup to eat together) and we would always pair our fancy fare with Scoop corn chips and large wedges of fresh tomatoes (another food favorite of mine and Granny’s) and a slice of sharp cheddar cheese.
Once we got our food made and plated, we would go into her living room, leave the living room door open so that we could see outside. We ate our delicious dinner and laughed at the antics of “Lum and Abner”, “Father Knows Best”, “Abbott and Costello”, and “Baby Snooks”. We always finished the evening off around 9pm with something suspenseful such as “The Shadow” or “The City of the Dead” by Adventures with Morse (my personal favorite).
Those were the good old days! That was back when we all still had radios in our houses and News Talk 740am would host an Old Time Radio segment each Sunday Night. It would start around 6pm and run until about 9pm and feature all sorts of Old Time Radio dramas from comedy, to adventure, mystery, and suspense. I’m telling ya, that wonderful memory just wouldn’t be the same without the food that brought us together and made it so special! To this day, I can still taste the delicious flavors of that southern style chunky chicken salad, and the hot, comforting feel of that bowl of tomato soup in my hand. The salty crunch of the corn chips paired with the juicy tenderness of that freshly sliced tomato brings tears to my eyes just thinking about it.
While we’re just sitting here in my kitchen reminiscing on days gone by, let’s go ahead and jump right into making this Southern Style Chunky Chicken Salad. We can eat, drink our sweet tea, and continue our chat. 🙂 I started out with 2 cups of cooked, diced, rotisserie chicken breast. You could make your own rotisserie chicken by following my easy slow cooker Roasted Chicken recipe, or a store bought rotisserie chicken will work as well. Even some grilled chicken breast diced into small chunks would work perfectly.
Once you’ve placed 2 cups of diced chicken into a medium sized mixing bowl, add in 1 cup of diced seedless grapes. I cut my grapes into fourths because they were so large, I didn’t want anyone biting into a whole grape and choking on it, but if your grapes are smaller, I would just leave them whole – they look so much prettier when left whole!
After you’ve added the grapes it’s time to add in 3/4 cup of diced celery. Now you can dice your celery in larger pieces but I personally hate to eat a chicken salad with large chunks of celery so I dice mine into very small pieces. I ended up using 2 really large celery stalks, slicing the white bottom end off and the top leafy end off and washing all of the dirt away under some cool water. Once that is finished, slice each stalk into about three small, skinny sticks and then dice each “stick” up. This is what creates the tiny diced pieces of celery.
Now for the good stuff, the mayonnaise and plain, nonfat Greek yogurt. That may sound like an odd combination but it just makes this Southern Style Chunky Chicken Salad so rich and creamy! The flavor is amazing! I added in 2 heaping tablespoons of mayo and 2 heaping tablespoons of plain, nonfat Greek yogurt.
Now just use that spoon you dipped the mayo and Greek Yogurt out with and stir all of the ingredients into your Chunky Chicken Salad.
After you’ve given the chicken salad a stir, add in 1 1/2 teaspoons of dried dill and ground black pepper to taste. I didn’t measure the ground black pepper but it ended up being around 1/4 of a teaspoon. Now let me just tell ya something, the dried dill gives this Southern Style Chunky Chicken Salad such a wonderful, down-home Southern flavor so don’t skip this ingredient! It might sound like such a small thing that it wouldn’t make much of a difference in the flavor but this dried dill really just makes this chicken salad!
Okay, now we’ve added all of our ingredients for this Chunky Chicken Salad (see how fast and easy that was?!) if you love nuts, you can add in some nuts of your choosing. Walnuts and pecans are wonderful in this chicken salad! If you’re like us and you want to skip the nuts, go ahead and stir the chicken salad up really well until all of the ingredients are fully combined, and get ready to serve!
One thing I love so much about this Southern Style Chunky Chicken Salad is how versatile it is. This Chicken Salad pairs perfectly with low carb Lavash bread, flat bread, wheat sandwich bread, croissants, Cabbatta bread, and butter lettuce wraps. You can even use it as a dip for crackers, pita chips, or celery sticks! Just get fun with it and serve it any way you would like or go the route of the minimalist and eat it straight out of the bowl with a spoon! haha!

Southern Style Chunky Chicken Salad
A creamy, delicious chicken salad filled with diced, roasted chicken, grapes, celery, and the amazing flavor of dill.
- 2 cups diced roasted chicken breast
- 1 cup diced seedless grapes
- 3/4 cup diced celery
- 2 heaping tbsp plain, nonfat Greek yogurt
- 2 heaping tbsp mayo
- 1 1/2 tsp dried dill
- ground black pepper to taste
Place all ingredients in a medium sized mixing bowl and stir well.
Serve the chicken salad immediately or store covered in the fridge.
This Southern Style Chunky Chicken Salad can be eaten in many ways, including made into a wrap using flat bread or lavash bread, spread onto sandwich bread of any kind, eaten with crackers, eaten by itself, or spread into a butter lettuce wrap.
