Easy Breakfast Pizza
Hey, howdy, hey my friend! It seems like it’s been forever since I’ve written a new blog post, when in fact, it’s only been one week. Debuting with this Naan Bread Breakfast Pizza recipe is a pretty strong come back though, am I right?! Our house got hit with a nasty cold virus and a stomach bug so I just had to take last week off and kick it into survival mode. We’re back now though, and I couldn’t be happier to be sharing this wonderful Naan Bread Breakfast Pizza with you today, along with a special Christmas memory. In my little Oklahoma home town, there’s a store right down the road from Granny’s house that makes the most amazing breakfast pizza’s.
Sometimes for special occasions (my birthday, Christmas Eve morning, etc) we would go and get a couple slices of their breakfast pizza. That fabulous Breakfast Pizza is what inspired this Naan Bread Breakfast Pizza for me today. I made my Breakfast Pizza using California Lavash Naan Bread which is healthy and wholesome with a few well known ingredients. If you’ve never made pizza using California Lavash Naan Bread, you are truly missing out!
Naan Pizza
With this Breakfast Pizza recipe comes a funny story and a little Christmas tradition my Granny started years ago. Each year we would always have pizza of some kind on Christmas Eve, then we would open presents. Every year Granny would pick a grandkid to pull a prank on and one year, I happened to be the lucky winner. Granny’s Christmas present prank happened to include the actual gift she was giving, placed in a box, which was then placed in another box and the process was repeated over 5-10 boxes. This box-within-boxes gift was made even more challenging because she would carefully wrap each individual box in duct tape before placing it in the next box. Every year we waited to see who would get the “prize present” because on the outside, it just looked like a normal box. I’ll never forget the year I opened a beautifully wrapped gift, only to discover I was the winner of the “prank present”.
We laughed and laughed as I struggled to unwrap box after box that was securely taped with duct tape. The funnier thing was that Granny used just whatever boxes she had on hand for this prank. The joke became more hilarious as I unwrapped a normal gift box that contained a dog biscuit box, followed by a pantyhose box, then a baking soda box, and the list went on and on. Finally, I got to the real prize: a tiny folded up $100 dollar bill. Looking back, I wish I would’ve kept that $100 for memories sake. Granny just had a little ornery streak in her like that and to this day, I carry on her tradition for her. This year someone in my husband’s family (who doesn’t know about this tradition) is going to be the lucky winner. I cant wait to see their face when they unwrap their present! That was such a great Christmas Eve to remember; from the delicious Breakfast Pizza that morning to the pranks and laughs that evening.
Naan Bread Breakfast Pizza
If you’re looking for a fast and easy Christmas morning breakfast recipe, look no further! This Naan Bread Breakfast Pizza is made in just minutes and is so delicious! Start out with 1 slice of California Lavash Naan Bread and 1 heaping tablespoon of crushed tomatoes. Spread the crushed tomatoes evenly over the top of the Naan Bread. This will be your pizza sauce.
Easy Naan Bread Pizza
Once the crushed tomatoes have been spread across the top of the Naan Bread, add scrambled eggs. For this Naan Bread Breakfast Pizza, I scrambled 3 eggs. Let me give you a couple of tips on getting the perfect scrambled eggs. When cooking the eggs, add a dash of salt and pepper for seasoning and a splash of ice cold water. The cold water will give you extra light and fluffy scrambled eggs!
Toppings for Scrambled Egg Breakfast Pizza
After adding the scrambled eggs, top the pizza with sliced cherry tomatoes and diced green bell pepper. I sliced up 5 cherry tomatoes and diced 1/4 of a green bell pepper. No need to cook or saute the tomatoes or bell pepper before adding them to the pizza. They will cook and become tender when you bake the pizza. This is also a great time to add additional toppings! Some great toppings for this Breakfast Pizza include: sauteed mushrooms, spinach, jalapenos, sliced black olives, diced onion, bacon, or sausage.
The Best Cheese for Healthy Naan Breakfast Pizza
Once your veggies have been added to your Naan Pizza, it’s time to add some shredded cheese. I added 1/2 cup of American/Colby blend shredded cheese, but you could also add shredded pepper jack, mozzarella, or cheddar.
Baking Healthy Breakfast Pizza
Your pizza is ready to cook! I used my little convection oven (and an almost too-small baking sheet!) to bake this pizza fast. Place the pizza in the oven and bake at 375F for 8-10 minutes or until the Naan Bread is golden brown and crispy. You also want to bake this until the cheese is fully melted.
Naan Bread Breakfast Pizza
Once your Naan Bread Breakfast Pizza is fully cooked, carefully remove it from the oven and place it on a serving platter. If you’re serving this for breakfast, I suggest adding some freshly sliced fruit on the side to go with it. A beautiful Fruit Salad would make the perfect side item!
Easy Naan Pizza
I sliced my Breakfast Pizza into 7 different slices and drizzled each slice with my favorite hot sauce, Sriracha. You could top your breakfast pizza with any type of hot sauce or salsa of your liking. I’ve even topped mine with a drizzle of Ranch dressing and it is also delicious!
