Gluten Free Instant Pot Cheesy Chicken and Rice
Hello there, my friend! It’s been awhile since I chatted with you here or shared a new recipe. I want to talk a little about “real life” with you here today, but first, let me introduce this Instant Pot Cheesy Chicken and Rice recipe. Chicken and Rice is a classic, timeless dish that will forever be special to me. One of my Granny’s favorites, this southern comfort food staple is a win around our house every time I fix it! I re-vamped my Granny’s vintage recipe a bit and made this gluten-free, healthier version in the Instant Pot for a fast and easy meal. Want to know something really amazing? It only took 12 minutes to make from start to finish! A minute ago, I mentioned real life, so while this chicken and rice recipe is certainly worth your time, there’s something else I want to talk about too.
If you’ve been around here very long then you know my Granny is the heart of my blog and an incredibly special person in my life. Unfortunately, she has been ill for some time now and the recovery isn’t going as we would like. Now that her health has declined, the special recipes and memories I share are just that – memories. She is no longer able to cook or be in the kitchen so I’ve found it painful to blog and share these recipes and stories like I used to.
Easy Instant Pot Cheesy Chicken and Rice
However, I am working to shift my perspective from that which is painful and begin to view these memories and recipes as a way to honor her. I appreciate your love and patience as I’ve taken time away from this blog to sort through my emotions and unplug from life a bit. Now, without further ado, let’s jump straight into making this delicious Instant Pot Cheesy Chicken and Rice recipe. I added 1 cup of mixed wild rice and 1 cup of jasmine rice to my Instant Pot pressure cooker. Add in 2 cups of chicken broth and 1 cup of water then place the lid on the Instant Pot, setting the steam release valve to the sealing position. Select the “rice” feature and let the Instant Pot do it’s thing.
Use Rotisserie chicken to make this meal fast and flavorful!
Once the rice is finished cooking, quick release the pressure by moving the steam release valve to the venting position. You should do this carefully with a long handled spatula or spoon because the steam will be very hot and can burn your fingers. Once the steam is released, stir the rice to “fluff” it, then add in 2 cups of diced rotisserie chicken.
No canned soups needed in this Instant Pot Cheesy Chicken and Rice recipe!
Once the chicken has been added, dice two slices of processed American cheese or about 1 ounce of Velveeta cheese and 2 tablespoons of unsalted butter. Arguably, from a health stand point, this cheese is probably just as unhealthy as canned soups, however, you’re only using a very small amount for flavor, so I felt that it was acceptable. While I know canned soups can lend a delicious flavor to food, the ingredients are somewhat disturbing to me so I avoid them in my recipes when I can.
Simple Seasonings makes this Instant Pot Chicken and Rice the perfect comfort food dish.
Now that the cheese and butter has been added, stir it into the hot rice until it melts and blends with the other ingredients. Add in 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon of freshly ground black pepper and 1/4 teaspoon freshly ground sea salt for flavor. I also recommend tasting your food after you’ve seasoned it and adding more of any seasonings you feel that it needs. Everyone’s individual palates are different so you may prefer more seasoning than what I have listed, and if so, add it in!
What to serve with Chicken and Rice Casserole
Just like that, dinner is ready! But wait – you need a fast and easy side to serve with this Instant Pot Cheesy Chicken and Rice! One of our favorite fast and healthy side items is steamed broccoli florets with sliced carrots. I steam them in water until tender, then drain all but a few tablespoons of water and add 1 tablespoon of butter and about 1-2 tablespoons of lemon juice for flavor. Add a pinch of salt and you’ve got a delicious, colorful side in just minutes! This is one our whole family enjoys and it pairs wonderfully with the cheesy, classic flavor of the Chicken and Rice.

Instant Pot Cheesy Chicken and Rice
This creamy and delicious comfort food meal is made fast and easy in the Instant Pot. Gluten-free and tasty, this recipe will be one the entire family will enjoy!
- 1 cup jasmine rice uncooked
- 1 cup organic mixed wild rice uncooked
- 2 cups rotisserie chicken diced
- 1 oz processed American cheese or two slices diced
- 2 tbsp unsalted butter or ghee
- 1 cup water
- 2 cups chicken broth
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp freshly ground black pepper
- 1/4 tsp ground sea salt
Place the rice, water, and chicken broth in an Instant Pot pressure cooker and lock the lid into place.
Set the steam release valve to the sealing position and select the "rice" feature.
Once the rice is cooked, quick release the pressure by moving the steam release valve to the venting position using a long handled spatula or spoon.
Remove the lid from the Instant Pot and add in the diced chicken, diced cheese, butter, and seasonings.
Stir until well combined and until the cheese and butter is melted.
Serve hot with your choice of side items. Enjoy!
