Fast and Easy Restaurant Salsa

Ok guys, I think we can all agree that chips and salsa is basically the food of angels. I know living here in the South we all loooove our chips and salsa!

I have created a simple and easy salsa recipe that also happens to be 0 Smart Points and completely Simply Filling. It’s also completely good. Just so we have that established.

The best part is that it literally takes minutes to make this easy and delicious salsa! You guys know I’m all about fast and easy without sacrificing flavor! This recipe does use some canned ingredients that you could always substitute for fresh ingredients but that will add some time and work to the recipe if you’re interested in putting in that little more effort. For me, when I want salsa I want it NOW so the faster and easier I can get that delicious goodness on the table, the better.

The best thing about a simple recipe such as this one is that you can customize the seasonings to fit your desired taste. Once I combine all of the ingredients and give it a couple of good stirs, I like to taste the salsa and see if it needs a little more salt or any other seasonings. Usually this form of “quality testing” leads to me eating more than a few chips and salsa because it’s just SO good! Once you crunch, you just can’t stop the munch!


I will warn you in advance that this salsa is rather addicting. I may have hid in the corner and ate the entire bowl by myself before. Maybe. My husband and son equally love this salsa so a girl has to get her fair share while she can before they swoop in to devour it! That’s my story and I’m stickin’ to it.

Ingredients

  • 1 28oz can diced tomatoes
  • 1 10.5oz can Rotel
  • 1 lemon just the juice
  • 5 stems & leaves fresh cilantro cut very fine
  • 2 tbsp onion powder
  • 2 tbsp garlic powder
  • 1/4 tsp salt

Instructions

  1. Blend canned ingredients 5-7 seconds.

    2. Pour tomato puree into a large bowl and add all other ingredients.

    3. Stir well and enjoy! 

Recipe Notes

This salsa can be served at room temperature, warm, or cold straight from the fridge. Store covered in the fridge for up to 2 weeks.
