Ya’ll, if you have some picky kiddos that don’t like to eat their veggies, you’ve got to try these Easy Cheesy Vegetables! These Easy Cheesy Vegetables are SOOOOO so good! I promise! The best thing about this recipe is how simple it is! Only four ingredients! Now, you just cant beat that. I can’t take the full credit for this recipe though. My husband and I were invited over for dinner to some friend’s house and the lady of the house served these veggies as a side dish to the fabulous steak she made. My husband (who is a picky eater himself) loved these Easy Cheesy Vegetables and told me I HAD to get the recipe, so I did! I changed my friend’s recipe up slightly to fit our tastes and preferences and I’m posting my revised version with her permission. I would give her credit but she’s not a food blogger, just a good home cook!
Start out by getting two regular sized cans of Veg-all or one large can. Pop the top off of the can and drain the water from the veggies.
Spray a 8×12 or similar sized casserole dish with nonstick cooking spray.
Once the casserole pan is prepared, pour the Veg-all veggies into the pan and add in 1/2 of a can of mild (or your favorite heat level) of diced tomatoes and green chilies.
Stir the diced tomatoes and green chilies into the Veg-All veggies and then add 1/2 of a jar of Cheez Whiz to the veggie and tomato mixture.
Stir the Cheez Whiz into the vegetables until well combined. Don’t get too aggressive with your stirring, you don’t want to mash the vegetables into little bits. Just gently stir and fold the Cheez Whiz into the veggies until it’s all well combined.
If you want some crunch to make the texture of this Easy Cheesy Vegetables extra special, crush up 12 Ritz crackers and lightly sprinkle them on top of the veggies and cheese in the casserole dish before baking. Once that is done, place the Easy Cheesy Vegetables into the oven and bake at 350F for 15 minutes or until heated through and cheese is bubbling. Remove from oven and DIG IN!
I can assure you, even the pickiest of eaters will love these Easy Cheesy Vegetables, and you will love how simple and easy it is to make!

Easy Cheesy Vegetables
A delicious and simple cheesy vegetable side dish.
- 29 oz Veg-all drained
- 5.25 oz mild diced tomatoes with green chilies not drained
- 7.5 oz Cheez Whiz
- 12 crushed Ritz Crackers
Spray a 8x12 or 8x8 casserole dish with nonstick cooking spray, drain the Veg-all and pour into the casserole dish.
Pour the mild diced tomatoes with green chilies in with the Veg-all and add in the Cheez Whiz.
Gently stir the Cheez Whiz into the vegetables until well combined and spread the vegetable and cheese mixture out evenly into the casserole dish.
Crush the Ritz crackers and top the veggie and cheese mixture with them.
Bake at 350F for 15 minutes or until the dish is warmed through and the cheese is bubbling.
Remove from oven carefully and enjoy!
