Cheesy Dorito Bake

My husband and I have always had a love for all things Mexican food. We like to frequent our local Mexican restaurant when we can but you just can never beat some good, homemade tex mex! One night I was in a bind over dinner. You know the feeling, the entire day goes by in a blur and suddenly it’s nearly dinner time and you haven’t prepared anything. What to do?! Sometimes I find myself in that position more often than not. The good thing about living life unprepared is that it forces me to become creative and make fast and easy recipes on the fly that I get to share with you all!

The disadvantage to that is realizing you’re starting to get bald spots from all of the frantic hair pulling that’s been going on as a result of last minute cooking sessions that sometimes go awry. With all of that being said, one night I had a hankering for some Mexican Rice and unfortunately I have never been able to hit upon that perfect Mexican Rice recipe, and it certainly isn’t for lack of trying! My husband can attest to that. So I was raiding the pantry and realized I had all of the ingredients to make a Mexican Rice type of casserole. I had never tried this combination together before so I thought, why not?

I’m glad I went for it because this casserole turned out absolutely delicious and the entire family loved it! I will warn you, the Cajun seasoning is a little spicy so if you have really young children who will be eating this you may want to cut the measurement for that in half or use mild taco seasoning instead. I hope you all enjoy this recipe as much as we did! Now, if you will please excuse me while I go devour the leftovers. Cheesy Dorito Bake

  • 1 lb lean ground beef
  • 1 cup fat free shredded cheddar cheese
  • 1/2 cup fat free sour cream
  • 1 tbsp Cajun seasoning
  • 1 box Rice-a-Roni Four Cheese Rice
  • 5 slices American cheese
  • 1/2 cup Nacho Cheese Doritos, crushed


  1. Cook ground beef, drain grease and set aside.

  2. Cook rice according to package directions.

  3. In a large bowl mix together the beef, rice, shredded cheese, sour cream, and cajun seasoning until well blended.

  4. Spray an 8x8 casserole dish with nonstick cooking spray and pour crushed doritos in the bottom. 

  5. Layer the beef mixture on top of the Doritos, then lay the sliced cheese on top in rows so as to cover the entire top of the casserole. You may have to cut some in two to do this. 

  6. Bake at 350F for 15 minutes or until cheese  on top is melted and the casserole is heated through.  

Recipe Notes

This recipe comes to 9 Smart Points per 1/2 cup serving. Recipe yields 8, 1/2 cups. 

Lean ground turkey or venison can be substituted for lean ground beef. Be sure to change calories and calculate points accordingly if using substitutions. 

Cajun seasoning is a little spicy so if you have young children who are sensitive to spice, mild taco seasoning can be substituted for the Cajun seasoning.
