Ok guys, let’s talk a little bit about this recipe for Easy Avocado Toast.
You already know I love guacamole but until recently I have never tried avocado toast or guacamole toast. Interestingly enough, my husband was the one who introduced me to this most fantastic of foods.
So, if you follow me on Instagram you know that my husband is a picky eater and not a “foodie” at all. I have tried for years to get him to taste new things and branch out with his food without much success until recently he really seems to have gained an interest in different foods (much to my delight!).
Every Saturday morning I try to make it a point to cook a nice breakfast for us since throughout the week it’s just a grab and go type of deal. In the past my breakfasts have consisted of not-so-healthy (but decidedly tasty!) carb-dense, sugary meals however, in an effort to eat healthier we have strayed away from these “sugar bomb” type of meals.
With this in mind, my husband has also made an effort to support me and join in on the healthier eating. He was surfing the web the other day and came across a photo of Avocado Toast and brought it to me. He asked if I could make some for breakfast and honestly, I was shocked. In the past he has REFUSED to even try avocado! Who is this man and what have you done with my husband? Ha! I agreed and that is how our very own twist on Easy Avocado Toast was born.
First you want to fry your egg. You can do this anyway you prefer, we like ours with a soft center so the frying part takes literally 2-3 minutes and you’re done. Just place the egg in a pan of oil (I like to use extra virgin olive oil and coconut oil) and let the oil get hot before adding the egg.
While I’m frying the egg I like to take my spatula and scoop the oil up over the yoke of the egg to help it cook faster and more evenly. Just be careful when you’re scooping not to splash hot oil on yourself!
When your egg is finished cooking, it should look like this:
Now that the egg is finished, just whip up some of my Easy Guacamole Dip , toast up some whole wheat bread, and spread the guac over the toast. Your Easy Avocado Toast is well on it’s way to being ready for consumption!
Now it’s time to add that egg!
I like to top my egg with salt and black pepper or red pepper flakes.
I know this recipe isn’t fancy or glamorous but it’s downright delicious if I do say so myself and it won’t cost you $9 per toast either! Now that you have your Easy Avocado Toast made, time to break that yoke! Mmmm…my favorite part!

Easy Avocado Toast
The perfect breakfast that is hearty and fast!
- 1 ripe avocado
- 1/2 lemon just the juice
- 2 cilantro leaves & stems cut very fine
- 1/8 tsp salt
- 1/8 tsp ground black pepper
- 1/4 tsp Mrs Dash Chipotle Seasoning
Slice open the avocado, remove seed and peeling. Place avocado in a small bowl and mash with a fork until smooth.
Add in all other ingredients and stir well. Spread mixture over a slice of toasted whole wheat bread and enjoy!
Recipe comes to 7 Smart Points per serving. Yields 2 servings with 1 serving being 1/2 of the guacamole, one slice of whole wheat toast, and one egg.
