Meet the Cook
I’m Amy, and I am absolutely delighted to have you here today.
The recipes you will find here are healthier versions of the Southern favorites I grew up eating and now enjoy cooking for my own family. I have taken our family heirloom recipes and made them simpler, faster, and healthier for the modern cook who doesn’t have all day to spend in the kitchen. The name of the game in my kitchen is simple, fast, and easy. I never make meals that will require long hours of prep work or request ingredients you can’t pronounce and don’t know where to find in the store. Since my husband and I live frugally, another requirement in my kitchen are meals that will be budget friendly and please the entire family.
I am a coffee drinkin’, chocolate lovin’, people feedin’ Southern girl that grew up in the Green Country area of Oklahoma but have since relocated to Arkansas where I’ve lived for the past 9 years with my husband Seth and our perfect baby boy, Erik.
I come from a long line of Southern cooks who love to feed people and watch them enjoy good food and community with family and friends. My earliest memories of Holiday’s with my family is of everyone gathered around a huge dinner table practically groaning under the weight of all of Grandma’s cooking, laughing and sharing stories with one another. Family events and celebrations were always centered around food in my house! It’s no wonder that I developed a love for cooking and serving others at an early age. It is my desire to share those happy memories and times of days gone by with you as you make my recipes for your family and create your own, lasting memories around the dinner table with the ones you love.
When I’m not in the kitchen I enjoy hiking, fishing, kayaking, cycling, crocheting, and reading. My greatest joy (besides cooking of course) is to watch my son grow and learn new things daily. I hold a degree in Early Childhood Education so at my core, I am still a teacher although I haven’t been in the classroom since my son was born. I have channeled my love for teaching and my passion for good food into every recipe I create and I delight in watching others learn to cook wonderful, healthful, meals for their families and share in this joy of nurturing and loving those around us.
My husband, Mr. Speedy Spatula, is the Head Taste Tester in my kitchen and our son Erik is my Junior Taste Tester. Both are selective eaters so I have some tough critics working behind the scenes to make sure my recipes are top notch!
Cooking is an act of service and there is no greater way one human can serve another than by making a wonderful, hearty meal for an ill friend, a family member in need, or an acquaintance that just needs a little reminder that someone loves and cares for them. When I see my recipes on your table my heart just bursts with joy and gratitude because I know in some small way I have helped to brighten someone else’s day through the sharing of a family recipe.
I started The Speedy Spatula on Instagram in my Sophomore year of college at the urging of a few friends who knew I loved to cook and wanted to share my recipes with their families. I started my page as a hobby and to keep myself motivated to cook dinners at home and reduce eating out in order to save money. I was pregnant with my son at the time and what scholarships didn’t cover my tuition, we paid for out of pocket so money wasn’t something that was plentiful for us. As my page evolved, my audience grew and began to spread across the United States, Canada, and Europe. The Speedy Spatula became known for fast, easy meals and delectable slow cooker creations that anybody can make and your children will enjoy. The focus of my meals have continually become more health oriented as I have found myself struggling with high blood pressure and hypothyroidism since the birth of our son. I firmly believe that food can be our medicine if we learn to use it correctly and I am striving daily to educate myself in order to heal my body and nourish my family in the best way possible.
