Happy Friday to ya! Today I’m sharing a super gourmet, fancy side dish that I’m sure you’ve never heard of before. Just kidding! haha! You know I don’t specialize in gourmet or fancy around here; but what I do specialize in is fast, easy, and downright GOOD! So here’s my take on Slow Cooker Mashed Potatoes. It’s not rocket science but it’s simple, southern goodness made easy! I can promise that you’ll love my Slow Cooker Mashed Potato recipe. Just try it and see!
I asked ya’ll over on Instagram to give me some side dish ideas that you wanted to see and remarkably, mashed potatoes was at the top of everyone’s list. I’m not sure why that surprised me, after all, they are one of God’s greatest gifts to mankind!
Luckily for all of us, I just so happen to have a smashing (no pun intended) recipe for Slow Cooker Mashed Potatoes – yes, they are made in the slow cooker! Perfect way to free up the stove for something else and let your slow cooker do all the work!
This recipe is pretty elementary so I’ll try not to bore you stiff with the details. First you’ll want to start out with some nice russet potatoes like these pictured below. I use four large potatoes when cooking for my family of 3 but I would triple this recipe for a family of six or more.
Now you want to peel em’
dice em’ and chunk em’ (chunk them in the slow cooker that is!).
Now just fill the slow cooker up with water just enough to barely cover the potatoes.
Place the lid on the slow cooker and set these potatoes to cook.
I cook my potatoes on high for four hours but you can also cook them on low for six hours.
Once the potatoes are finished cooking, remove the lid and poke them with a fork to check that they are tender when poked.
Use a potato masher to mash the potatoes until smooth.
No need to remove all of the lumps, you just want to make them smooth so that only very small pieces of the potatoes remain.
Now it’s time to add the goodies that go in these Slow Cooker Mashed Potatoes! Start out by adding 2 rounded tablespoons of plain, nonfat Greek yogurt. Greek yogurt is a healthy, more nutritionally balanced replacement for fat free sour cream. It tastes just like regular sour cream and is 0 Weight Watcher Freestyle Smart Points! Can’t beat that!
Now you’re going to add in my secret ingredient – one rounded tablespoon of light mayonnaise! This makes these Slow Cooker Mashed Potatoes so creamy and delicious!
Add in 1/2 cup of fat free skim milk. This will also make these Slow Cooker Mashed Potatoes creamy and give them the perfect consistency.
Give the Slow Cooker Mashed Potatoes a good stir and add in one tablespoon of low fat, grated Italian Cheese blend.
Add in salt, ground black pepper, onion powder, and garlic powder all to taste. Just add a little, stir, and taste and get it the way you like it. If you’re not comfortable doing that, start out with 1/4 teaspoon of everything and go from there.
Once the seasonings are added, give the Slow Cooker Mashed Potatoes a good stir to make sure everything is combined well.
And just like that, your Slow Cooker Mashed Potatoes are finished and ready to eat! This is an easy side dish your entire family, including your Little’s will love.

Slow Cooker Mashed Potatoes
Delicious, creamy, and effortless mashed potatoes all made in the slow cooker!
- 4 medium sized Russet Potatoes
- 1 rounded tbsp light mayo
- 2 rounded tbsp plain nonfat Greek yogurt
- 1 tbsp fat free grated Italian Cheese
- 1/2 cup fat free milk
- salt to taste
- ground black pepper to taste
- garlic powder to taste
- onion powder to taste
Peel and dice potatoes and place in a 3 quart or larger slow cooker.
Add 1 cup of water, cover, and cook on low 5 hours or high 3 hours.
Once cooked, drain the water and mash potatoes with a potato masher.
Add in all other ingredients, stir well and serve!
Recipe comes to 4 Freestyle Smart Points for one 1/2 cup serving. Recipe yields 6 servings.
