Okay now, ya’ll know how much I love a good slow cooker meal. You all are my people, you’ve got my back, and you totally support my love for Crockpot meals. That’s what I love so much about you guys! But with that being said, I will admit to some hesitation over posting this Italian Chicken Dinner recipe. I mean, it’s so simple, a one armed canine could make this! I was worried you all wouldn’t be interested in such a simple recipe, BUT I was wrong. When I made this Slow Cooker Italian Chicken Dinner on my Instagram stories, you all flooded my inbox with messages begging for the recipe! Well, I aim to please, so here it is! This Italian chicken and veggies made in the slow cooker is definitely a winner winner chicken dinner! haha! 😛 (See what I did there?!)
I love that this Slow Cooker Italian Chicken Dinner recipe takes simple, easy ingredients and turns them into something spectacular after cooking in your slow cooker. If you don’t have green beans and potatoes on hand, don’t stress out! You can sub the green beans and red potatoes for sweet potatoes, corn, beets, cauliflower, or carrots. You can also use skinless chicken breasts (boneless or bone-in), chicken legs, or skinless chicken thighs for this recipe as well.
Okay Momma, I know you’re probably in a rush and just want to get dinner in the slow cooker so that you can go about your day, so let’s get started. I had frozen chicken tenders on hand so I added in four (that’s about the equivalent to two chicken breasts) – and yes, I added them into my Crockpot frozen. I have been cooking frozen meat in my slow cooker for as long as I can remember and we’re all still alive, so I never bother to thaw my meat out unless it’s a large cut of meat such as roast or a whole chicken or turkey.
After adding in the chicken, I popped open one can of cut green beans and I added it in. Don’t bother draining the can, just dump the green beans in, liquid and all. I like to make this look a little prettier by arranging the green beans on one side of the slow cooker and placing the chicken in the middle.
After the green beans and chicken are in the slow cooker, wash six red potatoes (or any type of potatoes) under some cool water and scrub them with your hand to remove any dirt. These red potatoes are pretty small so that’s why I used six. If you’re using russet potatoes or a larger baking potato, you’ll probably only need two or three depending on how many people you’re cooking for.
Slice the washed red potatoes into fourths, creating large chunks.
Place your potato halves on the opposite side of the chicken.
Now that your green beans, chicken tenders, and red potatoes are in the slow cooker, add in 1/2 cup of water and then sprinkle it all lightly with ground black pepper and salt. I don’t measure the salt and pepper, I just add it in lightly. You just want enough to season this slow cooker chicken and vegetable dinner without being overpowering and overwhelming.
Now it’s time to add in 1 cup of the Zesty Italian Marinade Dressing. You can find this marinade down the salad dressing aisle in any grocery store and you can use any brand of your choosing. I used our grocery store brand of Zesty Italian Dressing but any brand will do. This is an oily vinaigrette just like the Olive Garden Italian Dressing – not the thick, white, Italian salad dressing.
Now that all of your ingredients have been added to the slow cooker (yes, that’s all!) place the lid on the slow cooker and get ready to let it do all of the hard work for you!
Once the lid is on the slow cooker, set the Slow Cooker Italian Chicken Dinner to cook time to high for 4 hours or low for 6 hours and then get out of the kitchen and spend some time doing more important things!
When the cook cycle is complete, remove the lid from the slow cooker and serve up this Slow Cooker Italian Chicken Dinner! I guarantee your family will love this one and ask for it again!

Slow Cooker Italian Chicken Dinner
A simple and easy Chicken and Veggie dinner made in the slow cooker with Zesty Italian Marinade Dressing.
- 4 boneless skinless chicken tenders frozen or thawed
- 15 oz cut green beans with juice
- 6 small red potatoes cut into large chunks
- 1 cup Zesty Italian Marinade Dressing
- 1/2 cup water
- salt to taste
- ground black pepper to taste
Place the chicken tenders in the middle of a 5 quart or larger slow cooker and add the green beans to one side.
Wash the red potatoes and slice them into fourths. Place them on the other side of the chicken and add in the water.
Season the ingredients with salt and pepper, then add the Zesty Italian marinade.
Place the lid on the slow cooker and cook on high 4 hours or low 6 hours.
Once cooked, remove lid and serve!
Frozen chicken tenders can be replaced for skinless chicken breasts, chicken legs, or skinless chicken thighs. Recipe serves 4 with one serving being one chicken tender and 1/2 cup of the green beans and 1/2 cup of the potato chunks.
