Low Calorie Strawberry Roll

Strawberry season is always a fun time around here because we get lots of fresh strawberries to eat. Sometimes we end up with too many and I have to come up with ways to use them before they ruin.

I grew up not too far from Stilwell Oklahoma where an annual strawberry festival is held every year. We would always wait for the strawberry harvesting season with great anticipation because we knew we would get some of the best strawberries this side of the Mississippi.

I don’t live in Oklahoma anymore but we still have a strawberry festival every spring where I do live and it has become a family tradition of ours for my husband and I to take our son to the festival each year to pick some fresh-off-the-vine strawberries.

This recipe I’m sharing with you today is a family favorite and one my mother made for me as a child. I’m not sure when she came across this recipe, but at some point in her life she joined Weight Watchers and was on the hunt for a good dessert recipe. Since it was strawberry season at the time and we had more strawberries than we knew what to do with, I think she just got really inspired and created this recipe that turned out to be absolutely delicious and one that I still request to this day!

Even if you’re not doing the Weight Watcher program or if you’re not trying to lose weight, this is an excellent recipe that the entire family is sure to enjoy.

Low Calorie Strawberry Roll

Delicious and so easy this recipe can't be beat! Only 3 Smart Points per 1 slice. Recipe yields 10 slices.

Ingredients

  • 1 box angel food cake mix
  • 1 qt strawberries
  • 6 oz fat free cool whip

Instructions

  1. Chop strawberries until some juice is present. Mix the angel food cake mix and the strawberries together until well blended.

  2. Spray a sheet pan with nonstick cooking spray and pour mix onto it.

  3. Bake at 350F for 15-20 minutes or until cooked through and a toothpick inserted comes out clean.

  4. Allow cake to cool completely and allow cool whip to thaw. 

  5. Spread the cool whip onto the cake mix and then gently roll like a jelly roll. 

  6. Remove from cooking sheet and serve immediately or place in the fridge to chill.
