I never knew I loved a good Caprese salad (I had never even tried one!) until a BJ’s Brewery opened just 30 minutes from my house and my husband and I decided to give it a try. All of our friends were raving about how good it was so off we went one date night to try out the latest eatery in town. Boy, were we in for a wonderful treat! We didn’t know what to order and everything looked good so we both settled on the Unlimited Soup and Salad. I think I tried every soup and salad they had to offer but my favorite combo was their Tomato Basil Soup and their Caprese salad. After that one trip, they had flung a craving on me and since the restaurant is 30 minutes from my house and driving to a restaurant every time I want a salad just isn’t practical, I decided to recreate this amazing bit of scrumptiousness at home!
It was Memorial Day and I had been asked to bring a salad to the family cookout so I pushed up my sleeves and created this fast and delicious Caprese salad. It was an instant hit and disappeared quickly.
So if you are looking for a fast and easy side item for your summer grilling and outdoor parties, I challenge you to try this Caprese salad! I can’t imagine anyone not liking it, I mean, what is there not to like?! 😉
I hope you all enjoy this as much as we did! This Caprese Salad also makes for a great side item to any Italian dish such as my Clean Baked Meatballs or use my Easy Slow Cooker Marinara to make a fabulous spaghetti or pizza recipe and serve this salad up on the side. The possibilities are endless!
Balsamic Mozzarella Salad
This salad combines the vibrant flavors of the balsamic vinegar with the tangy taste of the tomato, the crunch of the lettuce, and slightly sweet flavor of the onion to create a wonderful salad for any table, any time!
- 1 head leafy romaine lettuce
- 3 small tomatoes
- 1 container mozzarella cheese balls
- 1/2 sweet onion
- 1/2 small bottle Wish Bone Balsamic Vinaigrette Salad Dressing
Wash lettuce and pat dry with paper towels. Burrito roll 5-6 lettuce leaves at a time and start chopping into 2 inch rounds as if you were slicing a burrito into rounds. This will "shred" the lettuce into larger pieces.
Slice tomatoes into 4 wedges and peel the onion and slice it into thin strips.
Drain the juice from the mozzarella balls and set aside.
Place all ingredients into a large salad bowl, pour in the dressing just before serving and gently toss with a salad spoon. Serve immediately and enjoy!
The Wishbone Balsamic Vinaigrette Salad Dressing can be replaced for Balsamic Vinegar.
