Guys, I know this probably qualifies as tooting my own horn, but I have to do a little personal horn tooting over these Copy Cat Taco Bell Chicken Quesadillas. I have been so excited about sharing this recipe with you guys! These Copy Cat Taco Bell Chicken Quesadillas are so simple and easy to make. This would be a great recipe to grab your older kiddos and let them help you make! They’ll love eating them too! These Chicken Quesadillas also happen to Mr. Speedy Spatula’s favorite meal that I make. His birthday was a couple weeks back and he requested these Copy Cat Taco Bell Chicken Quesadillas for his birthday meal. I was more than happy to accommodate since this is one of my favorite meals as well.
Before we jump into making this recipe, I’m going to give ya a little sneak peak of what the finished product looks like. Just to tease ya a little.
Since I know you can’t wait to try these quesadillas, let’s go ahead and jump straight into making this recipe. I like to use Rotisserie Chicken for this recipe because it just makes the cooking of these Copy Cat Taco Bell Chicken Quesadillas so much faster but you can always boil two chicken breasts, shred it, and then use it for this recipe.
If you’re using rotisserie chicken for this recipe like I did, remove the skin and remove the meat from both sides of the chicken breast. Shred the meat and place it in a large mixing bowl. This is going to amount to about 3 cups of shredded chicken.
Once you’ve got your shredded chicken in a large bowl, add in 1 cup of plain, nonfat Greek yogurt. This is a healthier, more nutritionally valuable replacement for fat free sour cream and it tastes just like regular, sour cream. It’s also 0 Weight Watcher Freestyle Smart Points!
Add in 1/2 of a packet of low sodium taco seasoning.
Add in four tablespoons of Taco Bell Mild Sauce. This will give it that crave-worthy Taco Bell Chicken Quesadilla flavor that we all know and love.
Time to stir up your stuffing for these awesome Copy Cat Taco Bell Chicken Quesadillas! Stir until all ingredients are well combined.
Now since I don’t like to cook with tepid ingredients, and all of the cold, nonfat Greek yogurt will make this mixture a little tepid, I throw this into a small skillet and heat it on medium heat just until it starts to bubble and is warmed through. You’ll want to stir this occasionally as it heats just to ensure that it heats through evenly.
Now that the mixture for these Copy Cat Taco Bell Chicken Quesadillas is heated through, get your burrito shells out. I’m using white flour burrito shells here because that’s what my husband prefers but you can use whole wheat burrito shells to make this a little healthier.
Add 1 tablespoon of fat free shredded cheddar cheese to one side of the burrito shell.
Once the cheese is added, spoon 2 tablespoons of the chicken mixture on top of the cheese and spread it out on one side of the burrito shell.
After adding the chicken mixture to these Copy Cat Taco Bell Chicken Quesadillas, fold the opposite side of the burrito shell over on top of the chicken mixture.
Spray a large skillet with nonstick cooking spray and place the chicken quesadilla in the skillet.
Place a lid over the skillet and cook the chicken quesadilla on medium heat for about 1 minute per each side.
Once the quesadilla is golden brown on one side, use a large spatula to flip it over to the next side and cook that side. Once both sides are golden brown, the quesadilla is finished and ready to remove from the skillet.
Continue cooking your Copy Cat Taco Bell Chicken Quesadillas in this way and stack them on a plate. Once they’re all cooked, I like to use a pizza cutter to slice them into 4 pieces each or 8 mini pieces.
These burrito shells are HUGE and this recipe makes ALOT of Copy Cat Taco Bell Chicken Quesadillas! Actually, it makes 34 to be exact!
These Chicken Quesadillas are SOOO good and so easy to make! Oh, and did I mention that they freeze well? Just pop the leftovers (if you have any) into a freezer zip-loc bag, seal it, and write the date on the bag. Once you’re ready to eat these just get them out and pop them in the oven to heat and thaw. They come out crispy and perfect, just like when they were fresh made!

Copy Cat Taco Bell Chicken Quesadillas
A delicious, fast and easy week night meal that the entire family will love!
- 9 large, 10" flour burrito shells
- 3 cups shredded boneless skinless chicken breast cooked
- 1 cup plain nonfat Greek yogurt
- 1/2 packet low sodium taco seasoning
- 4 tbsp Taco Bell Mild Sauce
- 9 tbsp fat free shredded cheddar cheese
Combine the shredded chicken, Greek yogurt, taco seasoning, and Taco Bell sauce in a large bowl and mix well.
Place the chicken mixture in a small skillet and heat until it just starts to bubble. Stir occasionally to ensure that it heats evenly.
Place 1 tablespoon on one side of a burrito shell, then smooth 2 tablespoons of the chicken mixture over the cheese.
Fold the opposite side of the burrito shell over to close the quesadilla.
Spray a large skillet with nonstick cooking spray and place the quesadilla in the skillet.
Cover the skillet with a lid and cook the quesadilla for about 1 minute per side on medium heat or until the burrito shell is gold brown on each side.
Remove from the skillet and cut each quesadilla into 4 slices with a pizza cutter.
Serve hot and enjoy!
Place cooked, cut, and cooled quesadillas into a freezer Ziploc bag and seal. Write the name of the dish along with the date it was cooked on the bag and freeze.
No need to thaw before cooking, simply place them on a baking sheet and bake in the oven at 325F until warmed through.
These quesadillas will keep in the freezer up to three months after making them.
