It’s been awhile since I sat down and just chatted with you on here so I thought I had better step back into my little kitchen and share this fabulous Thanksgiving Broccoli Cheese Casserole with you guys! I know, I know, Thanksgiving is almost here and this is incredibly last minute, but I’m counting on the idea that there’s at least a few of you out there who are probably scrambling at the last minute trying to get shopping lists finalized and menus made just before Thanksgiving. Can you believe Thanksgiving 2017 is almost here?! Yeah, me neither. I think either the years are getting shorter or I’m getting busier (and possibly older).
The recipe I’m sharing with you all today is one of my all – time childhood favorites, Broccoli Cheese Casserole! You just can’t have Thanksgiving without Broccoli Cheese Casserole, ya know? Unless you were an exceptionally adventurous eater as a child, you probably refused to eat broccoli (just like I did!) so this Broccoli Cheese Casserole always brings back fond memories because it’s the first time I can remember trying broccoli and actually (gasp!) liking it!
Without further ado, let’s jump straight into making this recipe. It’s really simple and comes together quickly which you know, is exactly what I love in a recipe!
First you’ll need 2 bags of frozen broccoli florets, or the equivalent amount of fresh broccoli florets.
You’ll also need fat free cream of chicken soup, fat free cream of celery soup, and 1 jar of Cheese Whiz. Just go ahead and mix those all together in a bowl now.
Now that you’ve got your soups mixed, don’t forget the rice!
Now if you’re thinking this recipe is almost too simple to be true, it really IS that simple! And, it’s SO delicious! Just try it, I promise you’ll never want broccoli any other way again!

Broccoli Cheese Casserole
A cheesy, comforting, Thanksgiving side dish!
- 2 cups cooked white rice
- 2 bags frozen broccoli florets
- 1 10.5oz can fat free cream of chicken soup
- 1 10.5oz can fat free cream of celery soup
- 1 15oz jar Cheese Whiz
Boil broccoli until tender and drain water.
Cook rice and set aside.
In a large bowl combine soups and Cheese Whiz and stir well.
Add the rice and broccoli to the soup mix and stir until well combined.
Spray a 9x13 casserole dish with nonstick cooking spray and pour mixture into the dish.
Spread evenly with and spoon and bake in a preheated oven at 350F for 15 minutes or until heated through.
Recipe comes to 4 Smart Points for one 1/2 cup serving.
